Omelet Roll

This is really delicious, quick and very impressive.  I have served this on a breakfast buffet, or for a large breakfast gathering.   It is quick but last minute.   I got this out of Sprig 2010 Kraft magazine.   If you love omelets, you will love this version.

  1. Line a cookie sheet (that has sides) with parchment paper and spray with pan spray (like Pam). Mix all the ingredients together, except the shredded cheese, and pour it into the cookie sheet. Bake at 350 degrees for 15 minutes. Remove from oven and top with the shredded cheese and return pan to the oven for another 2-5 minutes til melted. Remove from the oven and using the parchment paper to get started, roll it up starting a the short end. Roll it all up in a jelly-roll fashion and put on a platter. You can now cut into slices. Serve with salsa on the side. Note: you can really put any kind of filling into your omelet such as mushrooms, cooked asparagus, spinach, diced tomato, etc. Be creative!
