  1. Saute onion in butter until onion is soft. Add potatoes and chicken broth. Cover pot and simmer until potatoes are very tender (approx. 45 minutes). Puree in a blender until soup is smooth and return to heat. Note: I puree in batches as its easier on the blender and gets everything nice and smooth. One time I decided to not puree and just go with the chunks, but it wasn't near as nice. Stir in the milk and cheese and heat it slowly until the cheese melts.
  2. My Aunt Isabel and her husband Uncle Jim did not have any children. When she passed away and we passed around her very valuable cookbooks, many of the recipes were altered for just two people. So for two people, the following ingredient amounts are suggested, with the same preparation instructions as above. 1/3 tbsp. butter 1 medium onion 1 and 1/3 potatoes 1 and 1/3 cups chicken broth 1 cup milk 1/3 cup shredded cheese
