Garlic Scape and Arugula Pesto

This recipe was given to me by garlic producer Clive Card.  On June 19th he brought me 10lbs of fresh cut garlic scapes, which might last a couple weeks in the store.    After that we wait for fresh local garlic.

  1. In a food processor, combine the scapes, arugula, basil, walnuts and once minced add the parmesan cheese and pulse 3-5 times to combine. With the food processor on, drizzle the olive oil through the feed hole. Drizzle in 1-2 tbsp. water for a thinner consistency. Season with salt and pepper and serve.
